The new cheese factory of John Kopiski has been launched in Vladimir region
- A new cheese factory opened three months ago. The previous one worked for six years. Today we process 6-7 tons of milk in one shift. 20% of processing is dairy products, 80% - cheese. In the first months, we built a balance in production and storage facilities. Now the process is fine-tuned, - said John Kopiski.
- Warehouses for 40 tons of cheese are at the disposal of the cheese factory.
- We would like to expand the storage facilities, as we have increased the production of cheeses with longer aging – now we produce cheeses with a maturation period of 10 weeks, instead of 6 weeks. Such cheeses are more in demand by customers, - said John Kopiski.
The head of the farm stressed that after the removal of restrictions on coronavirus, the sale is gradually restored.
- Our main store is opening. Yes, everything could be better than it is now, but it could be worse! With the growth of cheese production, we plan to open a store in Moscow. As for the range – we are considering expanding the line of soft cheeses, - said John Kopiski.
