Deputy General Director, Chief Technologist of the Russian Ice Cream Union Natalia Utkina said that due to the pandemic, manufacturers had to find and use new solutions in the organization of ice cream production and its implementation, which allowed them not to stop it during the general lockdown, writes The DairyNews.

- Ice cream was in demand at this time. And it is not surprising: after all, ice cream is a very useful low-calorie dessert, which contains the amino acid tryptophan, which contributes to the production of the hormone of happiness - serotonin. Due to the demand for ice cream during quarantine and warm summer weather, Russian ice cream producers increased their product output this year by about 15% more than last year! We can say that the record of ice cream production in modern Russia has been broken! - said the expert.

At the same time, she notes the negative results of the current year. First of all, they are related to the fact that the industry failed to convince the Ministry of Agriculture and the Ministry of Industry and Trade of the Russian Federation that digital labeling of ice cream is "an excessive and impractical measure".

Natalia Utkina noted that the experiments carried out in ice cream factories confirmed the lack of a technical solution for the implementation of digital labeling of ice cream.

- The equipment for the production of ice cream is produced in the vast majority of factories in Italy and Denmark. The designers of these companies did not even start designing solutions for the implementation of digital labeling. All other solutions offered by integrators are half measures and have not yet been implemented throughout the entire distribution chain, the expert said.

She noted that next year, ice cream producers will have to apply digital labeling manually, and this will significantly reduce the productivity of factories and lead to a significant increase in the cost of the finished product.

- In 2021, ice cream manufacturers will maintain the high quality of the product! Trends in healthy lifestyle and proper nutrition will contribute to the introduction of the expected new types of product to the market. When implementing digital labeling of ice cream, an increase in its price will be inevitable. In addition, this, in turn, can lead to an increase in the market offers of ice cream of economy class, - concluded Natalia Utkina.
