A feast of cheese!

The festival "Cheese days" started in Moscow on September 28 and will last until October 7, reports The DairyNews. About a hundred farms from all over the country will present their products. The correspondent of The DairyNews asked the cheesemakers if their products are in demand and what the money from sales is spent on.

The event is held in Moscow for the third year in a row. Cheese maker from Istra Oleg Sirota promised to feed Muscovites with products from different parts of Russia: from the harsh North Karelia to sunny Adygea, from the Western sea outpost of Kaliningrad to the Altai and Siberian cheese factories. "The success of cheese fairs of last years inspired Russian cheese makers, there are much more cheese producers now – more farm startups, more cheese, more import substitution!"- writes Sirota in Instagram.

The cheese festival widely spread in the capital: a large cheese market of 20 cheese makers is organized on Kuznetskiy bridge behind the Central department store of Moscow. 16 dairies are present in Revolution square, 7 dairies - in Tverskaya street near the monument to Yuri Dolgoruky. Profsoyuznaya street, 41 gathered 6 cheese makers, Orekhovy Avenue, 24 – 6 farmers-cheese makers, 6 cheese-makers 11represent their cheeses in Bulvar Dmitriya Donskogo.

Oleg Sirota notes that the capital's sites cannot accommodate all interested cheesemakers, so the event will be held in two rounds: from September 28 to October 2, then from October 3 to 7.

We asked the participants of "Cheese days" about the experience of participation and expectations in the current year.

- Last year we were very pleased with the results of "Cheese days". This year, unfortunately, it was not possible for us to take part in the event: due to a break in production, we did not have time to collect the necessary amount of products for sale. In cheese assortment we represented hard and semi-hard cheeses. It is very useful that the organizers of the event provided free places for participation and refrigeration equipment. We have directed the proceeds from the sale of cheese to the modernization of equipment.

– We take part in the event for the third year in a row. I can say that the results exceed all expectations, we did not even expect such a volume of sales. The range of cheeses is wide: we present the author's cheeses according to our own recipe – with white mold, with blue mold, hard and semi-hard cheeses. At different sites of "Cheese days" sales are not the same: on the site in Dmitry Donskoy Boulevard demand is four times less than on Kuznetsky Most – everything is so alive that there is no time to take a break. All proceeds from the "Cheese Days" are sent to the production, we usually buy something. Now we are planning to buy forms, as well as to develop a new direction: we want to build something like a small hotel complex, so that you can come to see and taste the cheeses. In other words, everything is spent on development.

– Generally speaking, I believe that "Cheese days" is an important event that gives an opportunity for good feedback, and also economically profitable. It’s a pity that we are not taking part this year – by the beginning of the event all the cheese has been sold. For two and a half days the year before, we sold almost 1.5 tons of cheese, and last year – about 300 kilograms. The money that we received from the sale was spent on different purposes, but the main cheese costs are working capital and expenses, respectively – investment.

- We participate in "Cheese days" not for the first time and not even for the second! I would be eager to sell 400 kilos of cheese during the event. We offer hard and semi-hard cheeses, cheeses with herbs, with different mold. What the money will be spent on? Only on development! We need to buy equipment, forms. We also planned to "move" to a bigger building. In general, events of this format are a great help for positive changes in the future.
It’s worth reminding that in 2016 the festival "Cheese days" allowed farmers to sell cheese 20% more than planned. In total, 60 tons of cheeses of different varieties were sold.
